Pesto Chicken Pizza
A quick and easy recipe idea I found on the internet and changed it up a little to suit Doug and I. We did indeed enjoy it with a glass of Chardonnay. It doesn't make a lot, enough for 2 people or you could cut it smaller and use as an appetizer, which I think would be great.
1 sheet of puff pastry, thawed or any type of pizza crust
4 tablespoons of basil pesto
1 cup of cooked, shredded or diced chicken, tossed with a little olive oil
1 cup, more or less, mozzerella cheese, shredded
parmesan cheese for sprinkling
salt and pepper to taste
Unroll puff pastry and place on a parchment paper lined baking sheet. Squish together any cracks.
Top with pesto spreading all the way to the edges. Feel free to add more if you would like. We love it, so the more the better!
Sprinkle chicken (I salted and peppered the chicken), then the mozzarella and finish with a sprinkling of Parmesan cheese if you like.
Bake at 400* for 15 minutes. It should be golden brown and crust cooked. If not, give it a few more minutes.
Cut into squares and serve.
