BBQ Chicken Quesadillas

Here's what ya need to make a quick and easy dinner on a busy weeknight!

Flour tortillas
Shredded chicken, I usually use leftovers
Shredded cheese, shred your own, it melts so much better!
Onion, sliced thin, you can leave it out for the kiddos...
BBQ sauce, as little or as much as you like.

On one side of a flour tortilla, spread desired amount of bbq sauce.

Top with desired amount of onion, cheese and chicken.


Place in a skillet heated over medium heat.

Cover with second tortilla and cook till bottom is golden and cheese begins to melt inside.

Carefully, so you don't loose the filling, flip the whole thing over and brown on the other side.

Once both sides are golden brown and the filling is heated through, remove from skillet and cut into wedges. Pizza cutter works great for cutting.

Serve as is or with extra bbq and a dollop of sour cream.

Quick, easy and yummy!
Change it up to suit your tastes, or what you have in the fridge.
The possibilities are endless...the results are delicious.
